The Chemex Classic 6-Cup ($50) and Fellow Stagg [X] Pour-Over Set ($60) are both premium pour-over solutions, but with different designs and brewing characteristics. The Chemex brews up to 900ml, making it significantly more capable for groups. The Stagg [X] tops out at 600ml, which covers two to three cups comfortably.
The dripper geometries differ. The Chemex uses a conical design with its own thick bonded paper filter. The Stagg [X] has a flat-bottom dripper with restricted outflow holes that slow drainage and create a longer contact time without requiring precise pour control. This makes the Stagg [X] slightly more forgiving for brewers who are still developing their technique.
The Chemex is a single-piece glass brewer and carafe with a wood collar and leather tie. It is a design icon and serves as an attractive serving vessel. The Stagg [X] comes with a stainless steel carafe that retains heat better than glass and is more durable. At 0.35kg for the full set, it is also lighter than the Chemex at 0.68kg.
If you brew for four or more people regularly, the Chemex's larger capacity justifies choosing it despite the $10 savings. If you brew two to three cups and want a more forgiving system with better heat retention, the Stagg [X] at $60 is the stronger all-around package.
